At the 2010 census Mesa Verde had a population of 1,023. The population density was 235.6 people per square mile. The racial makeup of Mesa Verde was 589 White, 8 African American, 9 Native American, 4 Asian, 1 Pacific Islander, 373 from other races, and 39 from two or more races. Hispanic or Latino of any race were 715 people.
The whole population lived in households, no one lived in non-institutionalized group quarters and no one was institutionalized.
There were 312 households, 146 had children under the age of 18 living in them, 169 were opposite-sex married couples living together, 48 had a female householder with no husband present, 26 had a male householder with no wife present.
