Just Salad


Just Salad is a chain of fast casual restaurants that serves salads, wraps, smoothies, soups, grain bowls, market plates, and toast boxes. The company was recognized by the Environmental Protection Agency as a regional WasteWise Award winner.

History

Founded in 2006 by childhood friends Nick Kenner and Rob Crespi after noticing a shortage of healthy yet affordable food options in Manhattan. Nick Kenner is currently the managing partner of Just Salad.
Since opening the first Just Salad location at 320 Park Avenue in New York City in 2006, Kenner has grown the brand to nearly 40 locations worldwide employing over 1,000 people in New York, New Jersey, Pennsylvania, Illinois, North Carolina, Florida, and Dubai. In 2019, Kenner announced plans to fund company growth by pursuing private equity or IPO within 2 years.

Menu

Just Salad’s menu has evolved to include wraps, warm bowls, avocado toast, soups, and smoothies. Produce arrives fresh daily and is only served raw, roasted, baked, or steamed while dressings are house-made daily. The company offers ten menu items under $10. In September 2019, Just Salad announced that it would replace grass-fed grilled steak with plant-based Beyond Beef Meatballs, citing the environmental impact of beef production. In October 2019, the company introduced Health Tribes, a digital-only restaurant featuring keto, vegan, gluten-free, and paleo recipes that are available on the Just Salad app and Grubhub.

Sustainability

Just Salad offers a reusable bowl program which saves over 75,000 pounds of plastic every year. It was recognized by the Environmental Protection Agency with a regional WasteWise Award in 2017.
In May 2018, Just Salad introduced a limited-edition Unlimited Salad Bowl. For $99, guests could purchase an Unlimited Salad Bowl to receive one free salad every day that month.
In January 2019, Just Salad appointed its first-ever Chief Sustainability Officer. In April 2019, Just Salad announced its Green Standard sustainability initiative, which includes a “zero waste” vision to send zero waste to landfills by 2022.
